Ingredients:
1 pint fat free plain yogurt
1/2 cup grated seeded cucumber
1/2 teaspoon roasted ground cumin (roasted cumin seeds in hot skillet)
Salt, black and red pepper to taste
Steps:
Peel a cucumber and cut it in half. Remove the seeds from the middle of the cucumber with a spoon. Grate the cucumber on a mandolin and squeeze the grated cucumber to remove excess water. Dewater the pint of yogurt by putting it in a cheese cloth and letting it sit for about an 1/2 hour. Add the cucumber to the yogurt and mix well with cumin and add salt and pepper to taste. Serve with warm toasted pita bread cut into wedges.
